What’s so good about Superfoods?
Superfoods are raw ingredients that have a high nutritional density, that is, a high nutritional content relative to the energy it provides.
Many believe that superfoods are just berries, fruits and vegetables, but it can also include seeds, nuts, roots, teas and algae.
Superfoods are foods that supply important vitamins, minerals, antioxidants, probiotics and fatty acids like Omega-3.
Different continents have different superfoods. In the Nordic countries there are for example, lingon berry, sea buckthorn, currants, blueberries, chokeberry, nettles and rose hip. In Asia there are green tea, miso, goji berry and algae, while in southern and eastern Europe there are special herbs, olives, tomatoes and roots.
Free radicals & antioxidants
Superfoods are bursting with antioxidants. Antioxidants are a collective name for substances that protects against free radicals.
Common antioxidants are for example
Vitamin C, vitamin A, vitamin E and selenium. About 11% of the oxygen we breathe is transformed into harmful molecules called free radicals.
Other sources of free radicals are stress, environmental hazards, tobacco smoke and radiation. The free radicals formed in our body are used by our immune system to attack bacteria but they can also have harmful effects.
Particularly sensitive molecules are DNA (inherited), enzymes (protein) and poly-unsaturated fatty acids. For example, if the DNA chain is hit by a free radical, it can cause mutations that lead to diseases such as cancer.
Antioxidants protect the body against free radicals. If a free radical hits an antioxidant, the damaging chain reaction is stopped.
The body has the ability to produce antioxidants by itself, but it’s important to have a daily intake as antioxidants are consumed when hit by free radicals.
